Pineapples are one of my favorite foods. They are sweet have lots of fiber, vitamin A & C and calcium, as well as iodine. Coconut milk is chock full of the good kind of fat for hormone pathway creation.

What better way to get all of this healthy goodness into your body than to blend up a pineapple coconut milk whip?

Here is the recipe – ready? It is just 2 ingredients.

  • 1/2 cup coconut milk (canned is best)
  • 1 cup of chunked pineapple (fresh is best)

Okay, well maybe 3 ingredients if you include the ice. These can be made without ice if you freeze your pineapple first, but I’m not one of those ubber patient kind of people. When I want my fresh cold thingy, I want it NOW.

Blend these up in a magic bullet or blender until creamy smooth and enjoy.

I’m sure you could use other fruits like cherries, raspberries or strawberries and have a smorgasbord of fruity goodness to last you through the whole summer!

Another clever idea is to put this mixture into Popsicle makers, freeze them and then enjoy them as a frozen treat. Bet you could get your kids to love them too!

If your kids are like mine, you might not want to turn them onto these amazingly decadent, no processed sugar included, frozen delights. It would be like chocolate in my house, I would have to hid it in my bedroom drawers and I think it would make quite the mess.
